Mozzarelle in carrozza e....tanti auguri papino!!

good evening .... But first I want to do happy birthday to my daddy as today, March 19th, is Father's Day ... thanks for all you have done for me and you always making me never miss anything ...

's finally Thursday ... come again tomorrow and then there 's the weekend to rest for a bit ... I hope strongly as there is good weather these days so I can go and do some camminatina though I doubt in that it involves a worsening almost everywhere ... but here's tonight looked crazy .. it was just crazy this time!
This evening I made my first mozzarella in a carriage, was all that I wanted to try and I finally decided I have to say .. .. slurposissime were just the recipe that I post below is for 4 people (3 each), while I have halved the dose as we were in 2 ..

Mozzarella in a carriage

SERVES 4

INGREDIENTS:

2 buffalo mozzarella (300 gr);
3 eggs;
1.5 dl milk;
24 slices of bread ';
breadcrumbs;
a pinch of salt 150 g butter

PROCEEDINGS

- With a sharp knife remove the crust from bread slices.
- Drain the mozzarella, pressing lightly with your fingers and then cut into slices the same thickness.
- In a flat-shelled eggs, add milk, salt and beat with fork until creamy and smooth.
- Dip the bread slices in mixture, turning on both sides and place them on a cutting board.
- Place the slices of mozzarella on half the bread slices (12).
- overlaps with the remaining slices by pressing with the palm of your hand above the edges.
- Pass the bread slices with mozzarella cheese in breadcrumbs, making it adhere well to each other.
- In a pan heat the butter and fry the slices making brown first on one side and then by 'another until it is golden brown.
